“Vegetarian Thanksgiving? Did I read that right?” Yes. Yes, you did. “But how can you have Thanksgiving without turkey?” Easy! Here are some tips for hosting a vegetarian Thanksgiving. (And hint: it doesn’t even have to involve Tofurky!)
For us, a vegetarian Thanksgiving is really not much different from any other Thanksgiving. We still have all the mashed potatoes, stuffing, gravy (vegetarian, of course), corn, green beans, cranberry sauce, etc., etc. We just don’t have the turkey. And that saves me hours in the kitchen! Which gives me more time to make some great vegetarian Thanksgiving side dishes.
All in all I figure it will take me two, maybe three, hours today to make our entire vegetarian Thanksgiving meal. Of course, I cheated and already made my pumpkin bread (made from fresh pumpkin puree leftover from our Halloween pumpkins) last night. The most time consuming thing will be to make the stuffing. So, what will I do with all this extra time today? Easy. I’ll be able to use it to spend more time with my family. Enjoying the things I am most thankful for this holiday.
